Representing a brand new and uniquely different gin on the market, Jinzu was created by Bristol bartender Dee Davies, and was made a commercial realisation following her winning entry in the world class ‘Show your Spirit’ competition – where bartenders were invited to create their own liquid and brand. Heavily influenced by Japanese imagery and ingredients, Jinzu is being described as a British gin with a Japanese twist, and uses both traditional & Japanese botanicals – along with the addition of sake. Named after the Jinzu River, which is lined by over 1,000 cherry trees, the packaging pays reference to oriental inspiration, depicting cherry blossom on the front label – one of the Jinzu’s principle unique flavours. The gin is made by infusing juniper berries, coriander and angelica in neutral grain spirit in a copper pot still, before adding yuzu fruit & Japanese cherry blossom immediately prior to starting distillation. Junmai sake is then blended with the gin post-distillation. The resultant gin is surprisingly weighty and intense in style, with a powerful aroma and flavour profile that is unashamedly brash and contemporary.
Crystal clear in colour. The bouquet shows pine and eucalyptus juniper with lime zest/lime cordial, floral cherry/honeysuckle blossom, celery-like and faint nutty angelica root notes. Sake seems to soften this gin adding faint sweetness and body to its mouthfeel. Thankfully Jinzu is firmly grounded in the classic London dry style with piney juniper still the predominant flavour with invigorating kaffir lime-like citrus zest and a delicate floral influence. Cleansing, sake, lime zest and juniper finish. However, Jinzu is a well-conceived and brilliantly executed riff on a classic London dry with juniper rightly to the fore.
