Amber gold in colour. The whiskey demonstrates its age with distinct tears forming down the sides of the glass. The powerful and dry nose is marked by honey, vanilla and spices – particularly pronounced are cinnamon and clove. The palate entry is at once round and full, marked by butter-menthol, citrus and spice over a charry oak background. The long finish evokes toffee apple, followed by a very sweet, soft butter-menthol aftertaste. An exceptional bourbon experience.

This is the 18th annual release of the world-renowned spirit, spending 10 years aging in barrels. It's also become a tradition to find that each bottle is marked with the exact date the liquid was placed into the barrel and then bottled. Inside each hand numbered bottle is a sweet, smooth bourbon with flavors like maple syrup, toffee and mint.

This whiskey is nicely balanced, with a teasing subtleness to it. I particularly enjoy its delicately honeyed, floral, crisply spicy aroma, with underlying notes of vanilla cream and candied fruit. These flavors follow through on the palate, initially with honey-laced fruit, caramel, and soft vanilla notes, leading to a dry spiciness (mint, cinnamon) and refined oak. It finishes crisp and pleasingly dry.

This Single Barrel Bourbon is deep amber in colour, the nose is light and sweet, with traces of mango and papaya. The body is full, and the palate shows a nice, if simple, balance of honey and clover. Has a slight fruitiness and a dash of spices.

Wilderness Trail Settlers Select Single Barrel Rye is made from a mash bill of 56% rye, 33% corn, 12% malted barley. The rye and corn are grown by a local farm and the grain bill uses a sweet mash rather than a sour mash like many Kentucky whiskeys use. Bottled without chill-filtration at barrel proof. As these are single barrel releases, expect variations in flavor and proof.
