For our third Distiller Series gin we took seasonal botanicals from Australia and Japan. The gin has bright aromas of pine needle, green citrus from yuzu and desert lime, and light green tea. Quandong and kinmokusei flowers add fruit flavour and the texture is driven by hinoki, red pine and dense juniper.

When the gin is produced it is transferred to a solera of nine French oak barrels where it rests for a period of time before the master distiller assesses each barrel and creates a blend for release. Our Sherry cask solera is made up of 42 casks, some from Spain and some from one of our mates who makes famous Australian fortified wines, historically known as “Australian Sherry” and now known as Apera. These barrels were first filled more than a year ago, and this is the first solera release taken only from the bottom row of barrels.

Four Pillars Spiced Negroni Gin is a highly aromatic, rich and (yes) spicy gin with great power and intensity. First, we took our base botanicals and upped the amount of Tasmanian pepperberry leaf and cinnamon. Then we added an exotic West African spice called Grains of Paradise. This is one of the most unusual spices in the world, with clove and sichuan characters. But although very powerful, the spice tends to glow rather than become hot.
