Located in Sant Sadurní d’Anoia, 40 km south of Barcelona, in Catalonia (Spain), the company has facilities perfectly adapted for raising their cellars. It is here in this cool and quiet environment, where the evolution of the brand cavas occurs after a long aging process. In the processing room are conducted preparatory processes for bottling wine and then uncorking process is done manually bottle to bottle. Finally, the bottles are passed individually by labeling phase, under the watchful eye of an expert, and are then hand-fitted checked to conclude the process. This boutique winery was built by Pere Canals with one clear objective: to create exceptional cava of the highest quality. Founded in 1999 in Sant Sadurni d’Anoia, Castell Sant Antoni is a boutique winery renowned for its high quality and long aged wines, matured 24 to 48 months before release. In order to capture the full essence of each grape, only the free run juice is bottled.
Made from a blend of Xarel-lo, Macabeo, Parellada and Chardonnay. Aged for six years. It is a brut nature, meaning it contains from zero to three grams of residual sugar per litre. Yeasty, toasty, nutty, citrus aromatics on the bouquet. Rich and creamy on the palate. Fine stream of bubbles with good fruit intensity and a fairly long finish.
