Palo Cortado is an exciting form of sherry that starts its life as a fino but suddenly turns itself into an Oloroso. The name means 'cut stick' and comes from the habit of the sherry winemakers of marking the barrels that declare themselves as this style with a stroke through the line that usually defines it as Fino.

As the name Viejisimo suggests this is seriously old Amontillado. The average age of the wine when bottled is 30 -35 years old (with a minimum age of 25 years old). Smooth, smoky, and deeply complex, it’s a fittingly contemplative example of the style.
