From the start the intention was to make a lighter style Pinotage. To ensure a vibrant acidity, Jolandie chose grapes from a 46 year old vineyard on granite soils. She also picked a bit earlier and worked very gently, after fermentation the wine was racked to old barrels and after 10 months aging it was bottled.
