In the heart of the Douro, Quinta da Levandeira do Roncão is located in Vilarinho quotas, Alijó municipality, 9 km from the Pinhão. With 40 hectares of vineyard and an enviable stock of old Port wines, the property was acquired by Agri-Roncão in 2001 with the mission to produce exceptional wines. After a profound restructuring of the vineyard and winery, completed in 2005, in 2006 begins the commercialization of the first Douro wines and Port wines under the brand DR and Quinta da Levandeira the Roncão. The production of high-quality wines results from a careful selection of grapes, coming exclusively from Quinta da Levandeira, and the perfect combination of the most innovative winemaking techniques and traditional techniques of the Douro. Quinta de Linhares is located in the demarcated region of Vinho Verde, sub-region of Sousa, in Penafiel. With a total area of 12 ha, this is where the Vinhos Verdes under the brand Quinta de Linhares are produced. Vinhos Verdes of excellence, produced exclusively with grapes from this vineyard.

Smoky Tuna and Bacon Burgers with Lemongrass Aioli

INGREDIENTS
1 pound tuna steak, well chilled
1 strip of bacon, minced
1/4 cup plus 1 tablespoon Lemongrass Wet Rub
Salt
freshly ground pepper
Vegetable oil, for brushing
1/4 cup mayonnaise
4 brioche rolls or hamburger buns
Sliced red onion, for serving
1. Light a grill. On a work surface, using a sharp knife, cut the tuna into thin strips. Stack the strips and cut them into cubes.
2. Add the minced bacon and chop until the tuna is fine and the bacon is evenly mixed in.
3. Transfer the tuna mixture to a bowl. Stir in 1/4 cup of the lemongrass rub and season lightly with salt and pepper. Using slightly moistened hands, form the tuna mixture into four 4-inch patties.
4. Brush the tuna patties with oil and season with salt and pepper. Grill the burgers over moderately high heat, turning once, until browned on the outside, about 6 minutes.
5. Meanwhile, combine the mayonnaise with the remaining 1 tablespoon of the lemongrass rub and season with salt and pepper.
6. Set the tuna burgers on the rolls and serve with the aioli and onion slices.
