Momo Sauvignon Blanc
Yet another cracking little Sauvignon Blanc that we've found for under £10. An enticing nose of nettles, lime, trademark gooseberry notes, as well as some apple blossom, the wines bursts with vibrancy in the mouth, showcasing lovely green fruits – lime, kiwi, passionfruit – along with a liberal dash of citrus. Really zippy acidity that makes your mouth water and a very decent length of flavour – it's a perfect quaffing Sauvignon Blanc.

‘Momo’ is a Maori word meaning ‘offspring’ and is the name given to a range of wines that spring from Seresin Estate in Marlborough, New Zealand. The estate was founded in 1992 by Michael Seresin, a cinematographer with many high-profile films to his name. After leaving New Zealand in the 1960s, Michael settled in Italy and was captivated by the Italian food and wine culture. He had looked into making wine in Italy but realising the potential of his homeland, he bought land in Marlborough and immediately set about planting grapes alongside olive trees, orchards, vegetables and herb gardens, replicating the polycultural farms he had seen in Europe. The estate converted to organics in 2000 and biodynamics in 2007. Michael has invested heavily in his vineyard but it is certainly not a successful man’s plaything; the wines speak for themselves and as Michael says, ‘a truly sustainable business is commercially sustainable, too.’ The fruit for Momo comes from three of the estate’s biodynamic vineyards with very different soils and a proportion is also bought in from a select group of neighbouring grape growers who all farm organically.
Pale in colour, with a light green hue. The bouquet shows aromas of tropical fruit and citrus with a hint of minerality. The palate is textural and rich with ripe tropical fruit and grapefruit. The finish is crisp and dry.

Nori-rolled sushi with soy dipping sauce
Cooking Time: 01 hrs 05 mins (approx.)

INGREDIENTS
200g/7oz Japanese rice
4tbsp/60ml/2fl oz white vinegar, such as rice vinegar or white wine vinegar
1 tbsp caster sugar
1 tsp salt
½ cucumber, seeded
1 avocado
175g/6oz fresh tuna or salmon
4 sheets nori seaweed
1 tsp wasabi paste (Japanese horseradish)
pickled ginger, to serve
soy dipping sauces, to serve
1. Begin by cooking the rice. Wash it well in warm water, then place in a pan.
2. Cover with water so that it comes 2cm/¾inch above the rice.
3. Cover and cook gently for 12 minutes, or until the rice is tender and the water has been absorbed.
4. Meanwhile, mix together the vinegar, sugar and salt and set aside to dissolve.
5. As soon as the rice is cooked, stir the vinegar mixture in to it and leave to cool completely.
6. Cut the cucumber, avocado and fish into batons.
7. Halve the nori sheets and place one half horizontally on the rolling mat.
8. Spread 2-3 tbspof the mixture on the seaweed, leaving a 1cm/½in margin on the edge furthest from you.
9. Spread a tiny amount of the wasabi across the centre of the rice, then place a row of cucumber and avocado or fish across the centre.
10. Roll up so the join is on the bottom of the roll. Continue to make rolls, alternating the ingredients so that some contain just fish and others contain cucumber and avocado.
11. Trim the ends of the rolls with a sharp knife, then cut each into six pieces.
12. Transfer to serving dishes and place a pile of pickled ginger with each.
