The establishment of the Sherry Triangle co-operatives began during the 1960s. For years, their main function was to create annual wines – in Jerez known as mosto or must in English – which it sold to wineries. All in all, they were suppliers of pre-elaborated raw material for the final traders. In 1989, Aecovi was established to defend the best interests of the co-operatives and their thousands of partners. Today, Aecovi is made up of four co-operatives located in many other cities of the Triangle: Nuestra Señora de las Angustias (Jerez), Católico-Agrícola (Chipiona), Unión de Viticultores Chiclaneros (Chiclana) and Covisán, of Sanlúcar de Barrameda. In numbers, Aecovi brings together 1,200 small grape-growers, which means close to 20 percent of all vineyards in the Sherry Triangle.Aecovi is much more than just a co-operative: it is committed to respecting the vineyards as well as the men and women who have worked the lands in the Cádiz province since time immemorial. It is also committed to creating wines by using the most traditional methods that benefit from the most modern and innovative grape-producing and wine-making practices. Aecovi, of course, is a company and, as such, its final purpose is to commercialize what its partners produce, but without ever losing sight of field controls, environmentally friendly techniques and supporting grape growers on a day-to-day basis, which are not means, but purposes themselves and part of the same activity developed by the company. The label is inspired by 19th Century labels for the new presentation of its sherry Mira la Mar. It’s a woman dressed in flamenco dress, a very typical Andalusian scene at that time in the wineries of the Marco de Jerez – ‘Mira la Mar’, or looking at the sea, which is exactly what the gypsy is going to do as soon as she turns around.
A Beautiful amber in colour, the nose has aromas of hazelnut, vanilla and a hint of flor. The palate is smooth and intense with notes of almond, hazlenut and caramel. Complex and well structured with an excellent, lingering finish.
