MadFish Cabernet Merlot
The wine jumps from the glass with aromatic black cherry, blueberry and chocolate characters. These characters continue on to the palate with complexing flavours of roasted coffee beans, mulberries and savoury dusty tannins. The palate is rich and mouth filling with seamless oak and well balanced acidity.

Deep dark red crimson colour with dark crimson mauve hue. The nose displays aromas of tobacco leaf, cedar and spice. Medium bodied the palate displays flavours of spice, blackcurrant, mulberry and cedar. Fine grained, slightly dryish but balanced tannins with aftertaste of blackcurrant, mulberry and spice.

Chicken Skewers with Coriander
Cooking Time: 00 hrs 25 mins (approx.)

INGREDIENTS
For the Marinade //
45 (a 3 tbsp.) ml lemon juice
250 ml (1 cup) plain yogurt 6% fat
15 ml olive oil 2 green onions, sliced
15 (a 1 tbsp.) ml coriander seeds, crushed
2 ml turmeric powder
2 ml curry powder
2 ml salt
750 g (1 1/2 lb) boned chicken thighs, cut into cubes
For the Dip //
250 ml (1 cup) plain yogurt 6%
15 ml olive oil (1 tbsp.)
15 ml lemon juice
30 ml (2 tbsp.) of fresh coriander, finely chopped
30 ml (2 tbsp.) fresh mint, finely minced
Salt and freshly ground black pepper
1. In a large bowl, mix the ingredients for the marinade and chicken.
2. Transferring all in a dish or bag closed tightly and refrigerate 6 hours.
3. Remove meat from refrigerator 25 minutes before cooking and soak bamboo skewers in water for 15 minutes.
4. Meanwhile, in a bowl, mix the ingredients for the dip and refrigerate.
5. Out 10 minutes before serving.
6. Insert 2 or 3 cubes of meat per skewer for entree and 5 or 6 cubes for a main meal.
7. Preheat BBQ to medium-high.
8. Deposit chicken skewers on hot grill directly over the heat, and cook 3 to 5 minutes.
9. Turn skewers regularly to ensure even cooking.
10. Serve chicken skewers with dipping sauce has coriander and mint.
