Joseph Perrier Brut Millésime Vintage
This wine is rich and toasty, with brioche and butter coming off the lemon and crisp apple aromas. The palate is delicious with lemon pith, rind and then some richer, almost under ripe tropical fruit flavours.
Product Description
Joseph, the son of wine merchant, François-Alexandre, established the Champagne House in 1825, “Joseph Perrier Fils et Cie”. They settled in Châlons-Sur- Marne, on the road to Fagnières. The offices are housed in an old post house and the wine cellars in the adjoining master residence. During that period, Chalons-Sur- Marne (now Châlons-en-Champagne) had several hectares of vineyards and approximately ten distinguished Champagne Houses. The House remains located at the original address of 69 Avenue de Paris, in Chalons-en-Champagne, and loyal to its origins.
The nose is expressive and charming, with notes of white peach, honeysuckle and quince, followed by some cake and exotic fruits. On the palate the Champagne is full and quite open, and beautifully balanced with real richness, with touches of ginger and apricot jam.
Salt Chilli Prawns

INGREDIENTS
1 tbsp cornflour
1 tbsp Maldon sea salt
1 tbsp chopped coriander
5 king prawns, peeled, tails left on
500ml/17fl oz vegetable oil, for frying
1. In a large bowl mix together the cornflour, salt and coriander. Add the king prawns and toss until coated.
2. Heat the vegetable oil in a deep, heavy-bottomed saucepan.
3. It is ready when a breadcrumb which is dropped in sizzles gently in it.
4. Deep fry the prawns for 30 seconds, then drain on kitchen towels.
5. Serve the prawns in a warm bowl.
