The Hine company was founded in 1763 and has achieved world-wide recognition for bringing authentic cognac to new heights of perfection. Drawing inspiration from his five generations of Hine predecessors, Bernard Hine selects, nurtures and blends Hine cognacs according to a rigorous code of quality without ever losing sight of their primary objective of providing the greatest of pleasures. In addition to Signature Rare, Delicate, Antique Triomphe and Family Reserve, Hine is one of a few rare companies to propose vintage Grande Champagne cognacs. When he died, in 1822, he left more than a prosperous business. His legacy was a name already known and appreciated around the world for the exceptional quality of its cognacs.
Produced in a very limited edition of 16 casks of 400 numbered bottles, the cognac is complex yet smooth – think fresh, aromas of vanilla, toasted almonds and buttery brioche lead among strong oak. Candied apricot, toffee apples and stem ginger combine on the palate. Rich honey lingers on the finish. Hine recommend trying it in some risqué ways…

INGREDIENTS
2oz Hine Bonneuil 2008 Cognac
.25oz Herbsaint
3 dashes Peychaud's Nitters
Sugar cube
METHOD
1. Rinse chilled rocks glass with Herbsaint and discard.
2. Place sugar cube in bottom of separate mixing glass, cover with three dashes of Peychaud's bitters, and crush cube until fine.
3. Add Cognac into mixing glass with ice and stir until chilled.
4. Strain into chilled Herbsaint-washed glass.
5. Garnish with a lemon twist.
