Product Description
Farigoule is the Provenal name for the herb, thyme, it is the essence of the region and the most revered of all the herbs. The thyme is picked just when it blossoms, it is then macerated then distilled. The mixture of the flowering tops and dried leaves gives Farigoule great aromatic balance. A tiniest amount of other local herbs such as sage, lemon verbena and angelica, are added to deepen the flavours and add local character to the liqueur. It is the traditional liqueur in Provence.
A viscous pale yellow green with a pale straw hue. The top note of fresh cut thyme subsides to reveal nuances of aniseed, peppermint and some faintly resinous notes (beeswax?) making for a complex bouquet. Entry is silky, medium sweet; expanding into a semi sweet yet delightfully fresh herbal / anise combo with notes of thyme and sage returning at the finish. Perfect balance. Concludes dry with subtle herb flavours demonstrating terrific persistence.
