Established for several generations on the peak of Sancerre, the Fouassier family is one of the oldest wine grower families of Sancerre. At the time of the phylloxera, Jules Fouassier was part of the 500 wine growers of the Sancerre village (nowadays we are about ten). After the phylloxera crisis, Jules Fouassier planted the Clos Paradis in 1902. After the First World War, Jules sent his son, called Gustave (and nicknamed Tav’) at an apprenticeship, so as to learn about the trade of cooper and wine grower. In 1923, Gustave participated to a farm competition in Paris with some colleagues. Nobody knew the wine of Sancerre, but this minor and unrecognized wine that was at the premises of its current renown captivated a lot of persons. The Fouassier family have been passing down knowledge from generation to generation, continuing the tradition with the current team of brothers Jean-Michel and Pierre Fouassier, together with their sons Benoit and Paul. Domaine Fouassier gained organic certification in 2011. The 2012 vintage will be certified biodynamic making them only one of three domaines in Sancerre to be certified biodynamic. As one of the oldest and largest holders of vineyards in Sancerre, this is significant for the region as a whole. Benoit and Paul believe that by looking after the vineyards, they can pass them on in the best condition for future generations. The viticulture is traditional, with grapes picked and cultivated according to the lunar cycles. The Fouassier philosophy is to maintain a respect for the land in everything that they do.
Fresh, with Meyer lemon and Key lime aromas. The clean acidity showcases straw and freshly cut grass. Ripe, with plenty of depth as it is layered with lemon curd, star fruit, and gooseberry notes, followed by a stony accent on the mouthwatering finish.
