As a young winemaker, like many others starting out, I wanted my first wine to be the greatest the world had ever seen. My amassed experience working as a consultant has demonstrated however that great wines are not born overnight from pure cognition. Great wines come from working years with the same vineyards, from trial and error, and from understanding every detail of winemaking. I’ve learned that a great winemaker knows intimately the vineyards he or she draws fruit from – they recognise the bearing of its microclimate and the nuances of the fruit it yields. This knowledge then gifts that winemaker the tools to express through the wine the precise place it came from. Blank Canvas represents my story as a winemaker. It is an endeavour that is entirely my own expression of winemaking, is from my own funding, and is exclusively my risk. My science background defines the parameters of my winemaking canvas, allowing creativity to flow within those blank bounds with brush and palette. Blank Canvas is about creating alternate styles of wine using exceptional varieties and unprecedented techniques.
Smoky, flinty on the initial bouquet with rich, deep citrus fruit within that style. Lime-like freshness, the spice showing on the back palate. There’s a creamy texture but not the creamy flavour that you get from lees stirring. The fruit fills the mid palate and the freshness and flinty character pull it in tight on a long finish.
