Based in the heart of Cognac, France, Audemus draws inspiration from traditional distilling techniques, blended with a modern alchemy and a passion for innovation. With a smallbatch production philosophy, coupled with an imaginative blend of ingredients, we create unconventional drinks that are proudly contemporary. Our products are created using reduced-pressure distillation, where each aromatic is macerated separately in alcohol then distilled at controlled temperatures to create concentrated aromatic extracts. Each extract is then assembled with a base of slow-reduced French wheat spirit, in a process similar to that which a perfumer would employ to produce his creations. The final products are non-chillfiltered in order to retain as much flavour and aroma as possible, and ensure the smoothness of the spirit. In collaboration with the Parisian boutique brewery, Deck & Donohue, Audemus Spirits has created the first gin to use beer as a principal botanical. The brewery’s Indigo IPA is distilled at low temperature to extract a suave, beery spirit, which forms the aromatic base of the gin. This is then assembled with juniper, angelica and two other secret botanicals. The end result is a light, refined and smooth gin with citrusy, hoppy notes.
The aroma is really soft to begin with before the spices start to build up, slowly growing to the surface comes the juniper. Then the hops start to come to the fore with an explosion of lemons that bring with them a real lightness, hints of coriander notes come through with every sip. It not too dry but does have a touch of bitterness that’s balances with a little sweetness and all around the edges which is light and floraly. The finish shows a lovely malty lemon paired with the juniper that makes for a very unique drink that’s so easy to sip.
