Aviation gets its name from the classic cocktail of gin, maraschino liqueur, and freshly squeezed lemon juice invented nearly a century ago. Today, Aviation seeks to redefine dry gins, shifting away from the overuse of juniper and replacing it with a balanced blend of botanicals including lavender, cardamom, and sarsaparilla. You can expect a smokiness throughout the sip, hints of citrus and cardamom, and touches of licorice with a slight sweetness at the end.

Cold River Gin is not a Genever, but it is closer to that old style of Gin. The flavor is still distinctly Gin, but with a citrus opening followed by long earthy, woodsy flavor with a distinct warmth from cardamom on the finish.

Often considered the missing link between Dutch Genevers and modern dry gins, Old Tom Gin was the prevalent style of Gin in 18th century England. In our quest to recreate this historical, full-bodied expression, we have crafted this special, overproof bottling from pot distilled corn, juniper, and botanicals inspired by the spice trade of the prevailing time period. Aged for one year in bourbon casks before being finished in Oloroso Sherry casks.

Leopold takes a unique process to crafting their gin, opting to distill each botanical individually to ensure the exact flavor of each is instilled exactly as they want it to be. Some of the botanicals that undergo this process include juniper, orris root, cardamon, coriander, and hand-zested valencia oranges and pummelos. This gin has hints of orris and angelica and a soapy hit of bergamot. The palate shows a really very floral gin with the parma violet of orris being very forward. There are hints of geranium and spicy coriander. The bergamot from the nose bridges the floral and the citrus well on the finish.

Gin has never stood still and the research for No. 209 Gin held to this ideology in crafting a new offering. The spirit started as a very heavily flavored, sometimes rough spirit, and it was for a time almost excessively sweet, then very dry and ‘junipery.’ Leslie’s team has expertly taken the juniper berry heritage a step further by fusing it with citrus, exotic fruits, and spices.
