Today, Aviation seeks to redefine dry gins, shifting away from the overuse of juniper and replacing it with a balanced blend of botanicals including lavender, cardamom, and sarsaparilla. You can expect a smokiness throughout the sip, hints of citrus and cardamom, and touches of licorice with a slight sweetness at the end.
