An Dúlamán Irish Maritime Gin is distilled using the standard London Dry method; all of the ingredients, bar the carrageen moss, are infused within the pot. The moss is vapour infused, to preserve its freshness. This is a coastal inspired affair, with juniper, coriander, angelica, sweet orange, lemon and cassia joined by Donegal sugar kelp, carrageen moss, dulse, dúlamán and pepper dulse.

Bertha's Revenge Small batch Irish Milk Gin, is made in Cork, Republic of Ireland. The aromatics are locally grown and harvested juniper, coriander, angelica, childish enthusiasm, alexanders, love, sweet woodruff. A fragrant bouquet, smooth palate, and spicy middle notes.

Distilled at the edge of lake, in a little shed in a small Irish town called Drumshanbo in Co Leitrim. PJ Rigney is pushing the boundaries of distilling using some of the finest oriental botanicals and gunpowder tea to create this unique gin. He uses 8 botanicals in the still Juniper, Angelica, orris root, caraway seed, coriander meadow sweet cardamom and star anise. He then adds a further four which are vapour infused Oriental lemon, oriental lime, fresh grapefruit and Gunpowder tea.

Jawbox Gin is named in honour of one of Belfast’s lasting legacies, the Belfast sink, a.k.a. the Jawbox. Distilled very slowly in a tradition copper pot still for the best quality spirit and maximum extraction of flavour esters from the carefully selected botanicals. Big hits of citrus, and juniper, which leads to pepper, pine and liquorice.

With primary herbal notes coming from rock samphire that they harvest by hand from the cliffs along the shore, it’s named after the Minke whales that swim in the ocean nearby. Not floral or junipery, it has its own unique flavor profile, with slight herbal notes from the samphire, star anise and cardamom on the palate and just a touch of citrus.
