The Four Pillars team draw inspiration from the traditional purple hued sloeberry Gins, taking the pick of Shiraz grapes from each vintage, to craft a brightly coloured, piquantly juniper flavoured Eaux de vie. The felicitous berries are treated to daily stirring over the course of eight weeks maceration, to be bottled without any filtration, for the development of expansive fruit richness and engaging Yarra Valley Shiraz complexity.

For our third Distiller Series gin we took seasonal botanicals from Australia and Japan. The gin has bright aromas of pine needle, green citrus from yuzu and desert lime, and light green tea. Quandong and kinmokusei flowers add fruit flavour and the texture is driven by hinoki, red pine and dense juniper.

When the gin is produced it is transferred to a solera of nine French oak barrels where it rests for a period of time before the master distiller assesses each barrel and creates a blend for release. Added to the botanicals seen in the Rare Dry expression are softer notes of cinnamon and nutmeg and on the palate some delicious flavours of anise and liquorice. This is a gin of good complexity.

Australian ingredients of lemon myrtle and pepper dominate with earthy, juniper berries in the background. A gin that demands tonic and will definitely put hairs on your chest.

Our new savoury gin is made by distilling with three different types of world-class cold-pressed olive oil plus olive leaf from Victoria’s Cobram Estate. A sensationally moreish and uniquely Australian gin.

The resulting gin has lifted aromatics of lime curd, pine needles, and fragrant spices with a vanilla character which pulls the spices together. The palate is intense – sweet and juicy – but it is still very clean.

Our Sherry cask solera is made up of 42 casks, some from Spain and some from one of our mates who makes famous Australian fortified wines, historically known as “Australian Sherry” and now known as Apera. They’re much older than our Chardonnay barrels, varying in age from 15 to 35 years old. These barrels were first filled more than a year ago, and this is the first solera release taken only from the bottom row of barrels.

Four Pillars Spiced Negroni Gin is a highly aromatic, rich and (yes) spicy gin with great power and intensity. First, we took our base botanicals and upped the amount of Tasmanian pepperberry leaf and cinnamon. Then we added an exotic West African spice called Grains of Paradise. This is one of the most unusual spices in the world, with clove and sichuan characters. But although very powerful, the spice tends to glow rather than become hot.

Hobart no 4 Gin has a bold character that gives it a welcome uniqueness. The soft citrus aromas by no means prepare you for the flavour which surprises the palate on the first sip with a strong peppery kick. With further sips, as the gin develops on the palate, the nuttiness character comes through and with the barley base, these elements give the gin its viscous mouth feel and weight on the palate. This is a delicious gin to sip.
