Charles Smith Chateau Smith Cabernet Sauvignon is rock solid, with classic violet, plum, licorice, earth and spring flower note giving way to a medium-bodied, juicy, balanced feel on the palate. Over five generations, members of the Hill-Smith family have been pioneers in locating exceptional vineyard sites that maximise the personality of their wines. Since the wine was released in 1980, Hill-Smith Estate Sauvignon Blanc has been recognised as one of Australia’s finest Sauvignon Blancs. Our Chardonnays from the Adelaide Hills and Eden Valley are contemporary wines crafted from fruit cultivated in premium Chardonnay growing regions. Possessing a genuine love and appreciation of wine from her early years, Teresa’s progression from microbiologist to winemaker was inevitable. A chance tasting with the Hill-Smith Family Vineyards winemaking team sparked her passion to discover more about the spectrum of flavour and aromas that are possible in wine – something which continues to fascinate and drive her today. From there, firstly, and very successfully, she took on the challenge of winemaker for the inaugural vintage at the Hill-Smith family’s Oxford Landing Winery, where she managed the making of both the white and red wines. Then, in 2008, Teresa accepted the challenge of becoming the Hill-Smith Family Vineyards Sparkling and Chardonnay Winemaker – the role she continues to develop today. Now she is also able to apply her individual style to the crafting of fine Eden Valley Sauvignon Blanc. She has always felt a great affinity for white wine – both in the vineyard and in the glass. Pale straw with green tints. The bouquet shows fragrant aromas of fresh peach, quince and citrus zest with subtle hints of French oak and flint from wild yeast fermentation. Flavours of fresh stone fruit and citrus curd are underpinned by fresh grapefruit acidity and a fine creamy texture on the finish.
Sipsmith is a small independent distiller crafting truly artisanal spirits of uncompromising quality. The master distiller, Jared Brown, crafts each product by hand, in genuinely small batches just a few hundred bottles a time. This delivers stunning spirits that are smooth, full of charater and have true intensity of flavour. Made from just the heart cut of the run, Sipsmith is the only ‘one-shot gin on the market. This means that we only put enough botanicals into the still for that particular batch. What comes out the other end is our gin. We believe that the one-shot method gives our product a different level of intensity of flavour.
Inspired by the favourable chocolate and orange combination, the expert team at the distillery were keen to create a modern take on the popular citrus gin category. Created at the Sipsmith Distillery in London, the new gin uses liquorice for natural sweetness, along with orange blossom, black cardamom and raw cacao nibs. To finish they rest it on fresh orange zest, which apparently creates a balanced, zesty, warming and juniper-forward gin.
