David saw a chance to start a wine brand, which could deliver great ‘drinkability’ and offered growers long term contracts (that are both fair and offer a sustainable future for all). David works closely with his select growers, and is involved with the day to day viticultural decisions, as well as orchestrating the development of new vineyards in the most extreme micro climates of the Awatere and Wairau valleys. David lives at the Black Cottage with his wife Pip and trusty sidekick Bruno (the Staffordshire Bull Terrier). The Black Cottage is now famous for a good night out and a place to enjoy an endless Sunday summer BBQ. When searching for a name for the new brand, friends could only associate the wines with a good time, and hence, the Black Cottage brand was born. Black Cottage wines don’t take themselves too seriously. They are pure, focused, with lip smacking acidity, loads of chewy fruit and fine tannins. Combining select parcels of fruit with modern and alternative winemaking techniques, we strive to create very special wines which are approachable and delicious. It is also the quiet space in which he contemplates and constructs the very special wines on which he has built a fine reputation. Once tasted you will not want to leave!
Bright, very pale straw colour with slight green hues, near colourless. The bouquet is very fresh with subtly expressed, gently aromatic and piquant gooseberry fruits with herbs, white florals and minerally elements. Dry to taste and elegantly presented, fine and penetrating flavours of pure gooseberry fruit are enlivened and brightened by lacy, racy acidity, The palate has a slipperiness balanced by fine phenolic textures and the wine flows with plenty of tension and energy to a slender, long-lingering fish with juicy and brisk acidity. This is an elegant, tightly bound and youthfully racy Sauvignon Blanc.
